Tofu is a food made from soybeans. The soybeans are soaked in water and then ground into a paste. The paste is then mixed with Nigari, which is a type of salt, and the mixture is placed into molds. The molds are then pressed, which removes the water from the tofu and gives it its firm texture. There are different types of tofu, depending on how much water has been removed. Tofu can be soft, medium, or firm. It can also be eaten fresh or cooked.
