Chai is a spiced, milky black tea that originated in India centuries ago. It is made by simmering black tea leaves with spices, milk, and sweetener until you have a rich and creamy beverage. Common ingredients used to make chai include cardamom, cinnamon, ginger, cloves, nutmeg, pepper, star anise and allspice. Depending on the region where it’s made (and who’s making it!), the recipe can vary immensely. For example, some recipes call for almond milk instead of cow’s milk or molasses instead of sugar. There are even vegan options available that require no dairy whatsoever!
