Celebrate National Corn Chip Day with an Epic Meal!

Did you know that January 29th is National Corn Chip Day? We don’t know who decided this was a thing, but we’re not mad about it. We love a good excuse to celebrate and eat delicious food. So what better way to honor this special day than by making some unique, mouthwatering meals using corn chips? Let’s take a look at some delicious recipes you can make for your next meal.

Chili Cheese Dog Nachos

Who says nachos have to be made with tortilla chips? Take the classic chili cheese dog and add nacho-style toppings like jalapenos, tomatoes, onions and of course shredded cheese…all on top of crunchy corn chips. It’s like having your favorite hot dog and nachos in one bite!

Taco Salad Bowls

Not your standard taco salad. Instead of the usual ground beef taco filling, make it with shredded chicken or steak cooked in your favorite Mexican spices. Then layer it with lettuce, tomatoes, black beans, olives and sour cream in an bowl full of corn chips!

Salsa Frito Pie

This Tex-Mex classic can be served as an appetizer or main dish depending on how hungry you are. Layer refried beans, salsa and shredded cheese into a baking dish topped with crumbled up Fritos or any other type of corn chip – taco flavor works great too! Bake until the cheese melts and serve with a dollop of sour cream or guacamole on top. Yum!

So get out there this January 29th (or anytime!) and celebrate National Corn Chip Day! Have fun experimenting in the kitchen!
