Cook a Sweet Potato Day happens on Thursday February 22, 2024.
February 22nd is Sweet Potato Day! And what better way to celebrate than by cooking up a delicious sweet potato dish? Sweet potatoes are an incredibly nutritious and versatile food that can be cooked in many different ways. So, grab your knife and cutting board and get ready to explore some of the many creative ways to cook a sweet potato!
One of the simplest, yet most flavorful ways to enjoy sweet potatoes is to roast them. To begin, preheat your oven to 400 degrees Fahrenheit. Then, cut your potatoes into wedges and place them on a large baking sheet lined with parchment paper. Drizzle olive oil over the potatoes and season with salt and pepper, or any other herbs or spices you prefer. Place them in the oven for 30-35 minutes, flipping halfway through until they become golden brown and crispy on the outside. Enjoy them as a side dish for dinner or a snack throughout the day!
Another popular way to cook sweet potatoes is to make sweet potato fries. Begin by cutting your potatoes into thin strips, about 1/4 inch thick each. Place them in a bowl and drizzle with olive oil before tossing gently so that they are lightly coated in oil. Season with salt, pepper, garlic powder (or any other herbs or spices you love). Spread evenly on a baking sheet lined with parchment paper and bake at 425 degrees Fahrenheit for 25-30 minutes until they become golden brown and crispy on the outside. Serve hot with ketchup or your favorite dipping sauce!
Mashed sweet potatoes make an amazing side dish for any meal! Start by peeling your potatoes before slicing into cubes. Place them in a pot of boiling water and let simmer for 15-20 minutes until soft when poked with a fork. Drain excess water from the pot then mash using either a hand masher or electric mixer until smooth. Add butter, cream cheese, milk (or plant-based milk), cinnamon, nutmeg (or any other desired spices) before mixing together one final time until creamy consistency is reached. Serve warm as a side dish along with any main course of your choice!
